Dinner Time! First of three dinner courses; this is the citrus cured steelhead trout with poached kumquats, black pepper fromage frais and flat leaf parsley sauce. I really liked how smooth the sauce was, how it glistened and brought a great colour contrast to the dish. This was paired with Montes Alpha Chardonnay 2010, Casablanca Valley.
